After years of refining our fermentation techniques, building meticulous process logs, and navigating the regulatory maze, Lunamor’s Larder sauces are now fully shelf-stable and officially approved for retail (okay fine, they have been for a while now, this blog post is a bit late).
We always knew our sauces were safe—crafted with precision fermentation salinity, pH tracking, gas exchange, and the sort of sanitary techniques Blake honed in his year’s working an a research laboratory. It’s why family and friends have been enjoying our sauces for over 15 years. But getting certified as shelf-stable for retail? That’s a different kind of milestone.
What does it take to go from “safe” to “certified shelf-stable”?
- Better Process Control School certification, to meet federal requirements for acidified foods
- Registration of our company with the Food and Drug Administration
- Development of scheduled processes that hit critical targets for pH, salinity, and thermal treatment
- Rigorous record-keeping for time, temperature, acidity, and fill protocols
- Submitting validated processes for review by a recognized Process Authority
- Formal approval by Washington State Department of Agriculture to sell sauces as shelf-stable in retail environments
Why does it matter?
- Convenience: No more needing fridge space until after opening (though the debate and nuances of opened-sauce storage are a post for another day… refrigeration essentially protects against the risks associated with outside contaminants re-starting fermentation or introducing pathogens… and covers us liability-wise.)
- Reach: Our sauces are now stocked in stores and can ship across the country.
- Sustainability: Less food waste. No cold chain-of-custody required.
- Trust: You don’t have to wonder if it’s safe. The science—and the state—say it is.
This level of transparency and rigor isn’t required of every hot sauce on the market. But it’s required of ours—because we believe food should be fearless in flavor and fully accountable in safety.
